Helen Von Stein Lamb's Ears, also known as Stachys byzantina, is a low-maintenance beauty that is so velvety and soft-looking that you may want to pet it, and that’s fine. Large, elliptical foliage is a silver-green hue and gently rounds to a point. The leaves have a soft suede look, and the midrib and evenly spaced veins provide subtle texture. This plant is primarily grown for its foliage, although purple-pink flowers bloom on tall spikes.
Lamb’s Ears is a clump-forming plant that makes a wonderful groundcover. It does not get very tall, but plant near the front of a bed or mass planting for texture. This beauty effortlessly handles high heat and humidity, making it a wonderful choice for areas with intense summer weather. Helen Von Stein Lamb’s Ears grows as a perennial in zones 4 through 8.

Perhaps the most essential care requirement for Lamb’s Ears is drainage. The soil must be well-drained because this darling beauty does not like wet feet. Water when the top several inches of soil is dry, and apply water on the soil when possible to keep the leaves dry. Plant in full sun to partial shade, but select a spot with more shade when grown in hot climates. Fertilization is unnecessary as this plant does not even like rich soil.
Leave the flower spikes for the color and slight fragrance of the blooms, or remove the spikes to redirect energy into the foliage. As a herbaceous plant, all greenery can be trimmed back in the late fall or early spring.
